Cellfire Coupons 11/3/2009

More Apple Butter!

Well I was given another basket of apples from my parent's apple tree and tried a new recipe that seemed easier for apple butter..... I did change the recipe a little bit since I wasn't sure I liked how sweet this may become but here is the recipe.....It's "Marion's Apple Butter taken from the 'The Big Book of Preserving the Harvest'" :

10 Large (about 5 pounds) tart apples

2 cups apple cider

3-5 cups of sugar

3 teaspoons ground cinnamon

3/4 teaspoon ground cloves

1/2 teaspoon ground allspice

1/2 teaspoon ground nutmeg

1. Wash, core & quarter the apples....no need to peel them.

2. Cook the apples slowly in the cider until tender. Blend in a food processor (I used a handheld immersion blender). You should have about 12 - 14 cups of pulp.

3. Add 3 cups of the sugar, then more sugar, if needed, to attain the desired sweetness. Add the spices and mix thoroughly.

4. Cook in a 350 degree F oven or slow cooker for 6 - 8 hours, stirring often. ***I had a full to the top 5quart slow cooker and it took double the time*** Test for desired thickness by spooning the mixture on a cold plate. If no liquid oozes around the edges, it is thick enough.

5. Ladle into sterile jars, leaving 1/4 inch of headspace.

6. Process in boiling-water-bath canner for 10 minutes. Adjust for altitude, if necessary. This apple butter can also be frozen.

Note: The apple butter will keep for up to 2 weeks in the refrigerator after it is freshly made or thawed and opened.

I should probably post the pumpkin pie recipe I use my apple butter in, but I can't do it at the moment :)

Fruits of labor

Well after careful thought, I decided to put myself (and Kyri) to work on all the apples my parents brought from their tree. The gave me a box full (which converted to a small sink full) plus a 5 gallon bucket of fresh apples. What to do, what to do.......After searching Allrecipes.com and some other sites, I came across a few yummy recipes. I am normally not the type of person to take the time to put a bunch of food in the freezer like this, but given the economy and trying to stretch the almighty dollar as far as possible....here's what we made!

The first picture is apple pie filling (threw in some dried cranberries! YUM)! I made 5 pies worth of filling....honestly, we could have easily just spooned some over some ice cream and eaten it all right then and there :P

The 2nd picture is apple butter which I made in the slow cooker. I've transferred it this pot because of the darned hot spot in my crockpot. Anways, I use apple butter in the pumpkin pie I make every year since watching Paula Deen make it on tv! YUM

The 3rd picture is one of many jars of applesauce. This recipe was from pickyourown.org ....so simple. Didn't even have to peel the apples...which, but the time you get halfway thru a 5 gallon bucket, you don't feel like peelin anymore!
I feel very accomplished now :P All the times I rolled my eyes at my mother, growing up, at why go thru all the trouble of canning....Mom I get it now!

New Scrapbook Pages

Dave and I celebrated our 6th Wedding Anniversary this past Sunday and it was such a nice weekend! I got to scrapbook! :P Dave had a lot of studying to do, so we sat side by side in our office....him studying and me scrapbooking....true love!
